Ingredients:
10.5 oz (350 g) whole wheat flour
3 tsp. baking powder
5 oz (150 g) butter or margarine
5.5 oz (160 g) brown sugar
3 whole eggs
3-4 ripe bananas, mashed
1/2 cup (1/8 l) milk
3.5 oz (100 g) walnuts, chopped
1/4 tsp. salt
1 tsp. vanilla
Preparation:
- Sift together whole wheat flour and baking powder.
- In another bowl, beat together butter and sugar until light and fluffy; beat in eggs. Add mashed bananas.
- Stir flour mixture alternately with milk to butter mixture, mixing just until blended. Add nuts, salt and vanilla.
- Pour into greased loaf pan.
- Bake at 350 F (175 C) until golden brown on top and tester inserted into center comes out clean, about 50 minutes.
Makes 1 loaf.
