
Ingredients:
4 oz. (125 g) butter
3/4 cup brown sugar
2 eggs
1 cup mashed ripe bananas (3 large bananas)
3/4 cup sour cream
2 tablespoons milk
1 1/2 cups of self-raising flour
1 teaspoon baking powder
Preparation:
- Heat oven to 350 F (175 C).
- In the bowl of an electric mixer, cream butter. Gradually add sugar and beat on high until light in color. Add one egg at a time, beating in between.
- In another bowl, combine the bananas, sour cream and milk. Stir into butter mixture together with flour and baking powder.
- Pour batter into greased loaf pan and bake in moderate oven for 40 to 50 minutes. To check, insert a skewer into the centre of the cake. If it comes out clean, the cake is cooked.
