Ingredients:
2 1/2 lbs boneless chicken breast, cut into bite size pieces
2 Tbsp soy sauce
1/2 teaspoon salt
2 large eggs
1/4 cup cornstarch
a pinch of white pepper
1/2 tsp baking powder
oil for frying
FOR LEMON SAUCE:
1/3 cup sugar
1 cup chicken broth
1 1/2 tablespoons cornstarch
2 tablespoons lemon juice
3/4 tsp salt
3 slices of lemon, peeled
2 Tbsp oil
Preparation:
- Combine chicken with soy sauce and salt. Let stand in the refrigerator for 1/2 hour.
- In the meantime, beat eggs with cornstarch, white pepper and baking powder.
- Take chicken out of the refrigerator and coat it with the batter.
- Deep-fry chicken in oil for about 5 minutes or until golden brown. Drain.
- For the lemon sauce: Combine all the ingredients and mix well. Add slices of lemon to the mixture.
- Cook over medium heat, stirring, about 5 minutes until sauce becomes clear. Pour the sauce over the chicken. It is best served with rice and broccoli.
