Ingredients:
2 lb turkey drumsticks and thighs
1/2 cup celery, chopped
1/2 cup carrots, chopped
1/2 cup onions, chopped
3 sprigs parsley
5 peppercorns
1 bay leaf
4 cups chicken stock
salt, black pepper
Preparation:
- Season turkey with salt and pepper. Place the meat together with the remaining ingredients in the pressure cooker. Lock the cooker’s lid in place. Cook for 15 minutes with pressure regulator rocking slowly. Let pressure drop of its own accord.
- Remove the turkey and vegetables from the cooker using a slotted spoon.
- Strain the stock, bring to a boil and reduce slightly; season with salt and pepper. Serve the gravy drizzled over the turkey and vegetables.
