Serves 4 to 6.
Ingredients:
6 large eggs
1/2 cup heavy cream
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 can (4 oz) chopped green chile peppers, drained and chopped
4 ounces shredded Cheddar cheese
Preparation:
- Mix eggs, cream, salt, and pepper. Stir in chile peppers.
- Grease a shallow 1-quart baking dish. Sprinkle cheese over bottom of baking dish then pour egg mixture over cheese.
- Bake in oven pre-heated to 325 F for 25 to 30 minutes, or until set.
