Ingredients:
8 oz (240 g) self-raising flour, sifted
2 oz (60 g) caster sugar
a pinch of salt
2 eggs
1 cup milk
Preparation:
- Combine four, sugar and salt.
- Whisk eggs and milk together. Pour this mixture into the flour mixture and beat until smooth.
- Heat a griddle or cast-iron frying pan until very hot. Grease with butter or oil.
- Drop the batter, a tablespoon at a time, onto the heated griddle. Bake over a moderate heat until golden brown on both sides.
