Ingredients:
2 pounds russet potatoes, peeled and diced
4 large cloves garlic
1 1/2 cups chicken broth
1 tablespoon butter
salt and pepper to taste
Preparation:
- Place potatoes, garlic, broth in the pressure cooker. Lock the cooker’s lid in place. Cook 5 minutes with pressure regulator rocking slowly. Cool cooker at once.
- Mash potatoes using a potato masher or hand mixer. Add butter. Season with salt and pepper.
